Bao Down to open UBC outlet soon, following months-long delay

Update Thursday, June 14 at 2:13 p.m.: Co-founder Matt Adolfo said Bao Down is currently “waiting on final permits” and “training staff and trying to open up ASAP.”

Pan-Asian restaurant Bao Down expects to open their UBC location within two months — after it was expected to launch along with other food outlets along University Boulevard in fall of 2017.

Co-founders Matt Adolfo and Gregory Edwards attributed the delay to an issue with a prospective investor temporarily backing out of the project. That investor has now returned to the UBC project, restarting the construction of the outlet once again. They confirmed that the new location is on track to open soon.

“We’re just finishing gearing up to open now,” said Edwards. “We’re planning to open by June at the latest.”

Edwards said the new location will feature signature items from Bao Down’s Gastown location. Apart from UBC, Bao Down has opened three other locations in Vancouver after shuttering its original outlet on Powell street.

UBC Properties Trust (UBCPT) declined to comment about the specifics around the delay, citing company policy.

“Like the rest of UBC, we are happy that construction has re-commenced and excited for Bao Down to open their doors,” said Nathan Ma, UBCPT development manager.
